Soft Chapathis and vegetable kurma

I never have the habit of taking any item without a side dish..in such case nobody will love to have i guess! that too i love to have all the spicy side dishes.. When ever i go to any restaurant my first preference will not be a main course but a side dish and later will search a main course for that side dish!! so one day i really wanted to have a very spicy side dish for chappathi and i dont prefer vegetable kurma much for chappathi. But as husband was asking for the same spicy stuff, i tried vegetable kurma. It was so hot and spicy that we both ended up in having hiccups continuously for some 20 mins..!! From then on i tried to reduce the spice content in any dish which i do! So here comes the spicy vegetable kurma.

Vegetable Kurma

All you need is:

Mixed vegetables- 1 cup
Onion-1/2
Tomato- 1
coriander- little
ginger grated
garlic grated
oil
chilly- 3Nos
chilly powder- 1.5tsp
turmeric powder - 0.5 tsp
water as required
Bay leaves and cinnamon - for taste

Do it this way:

  • Add oil to the pressure cooker and heat it.
  • Put cinnamon and bay leaves
  • Add grated ginger and garlic ( i always prefer fresh grated rather than paste available in the stores) 
  • Saute all of the above until the raw pungent smell leaves. 
  • Add onion and saute well
  • Add tomato and saute well
  • Add green chillys and mixed vegetables
  • Saute well
  • Add salt, turmeric powder and chilly powder and saute well
  • Add water so that the veggies shall be cooked
  • Add coriander
  • Close the cooker and cook till you 2 to 3 whistles
  • Wait until the steam is released and you can add grinded coconut paste in order to get a thick gravy
  • serve hot with soft chappathis.


Soft Chapathis


Mostly i avoid making chappathis as i dont get them softly.. i have tried plenty of times and the result was hard, biscuit like chappathis!! One day i desperately sat and looked for other blogs as how to make soft chappathis and on my trial, to my surprise it was awesomely soft..Thanks to the blog http://www.mamtaskitchen.com/recipe_display.php?id=10101 and some youtube videos.
These days i make very very soft chappathis which myself as well as my husband love to munch without even a side dish!!

 soft chappathis
All you need is:

Atta flour: 2 cups
Oil: 2 tsp
water: as required
Salt: as required.

Do it this way:
  • Take a bowl, add oil, salt and little water.
  • Mix the above mixture
  • Now add atta flour (i use pillsbury chakki fresh atta)
  • Now add water slowly little by little
  • Mix thoroughly until you get dough consistency.
  • apply oil over the kneaded dough and cover the dough with neat clean wet cloth.
  • Keep the dough inside the refrigerator for 1/2 hr to 1 hr
  • After an hr take the dough, make balls and roll in to a chappathi
  • Heat the tawa in medium flame, put these rolled chapathi and the chappathi puff out.
  • turn over the other side, press all through the corners and soft chappathis are ready!!

Indo chinese pasta

I like pastas and so my husband! My sisters will make this often either for breakfast or dinner.. wanted to try this one in a day when i did not want to cook at all..! and it was good too..

Indo chinese pasta



All you need is:


                                             

1 cup of Mixed vegetables like carrot, beans, capsicum, cabbage, spring onion etc
Pasta
Oil
onion - 1/2
Tomato - 1
Grated ginger
salt
sugar - a pinch
Green chilly - 3-4
chilly sause - optional
soya sause -
pasta sause -
water as needed

Do it this way:


Pasta:




                                                   


  • Boil water, add pasta, salt and 3 drops of oil. 
  • When pasta is cooked, drain the water and keep the pasta aside. 

For sauting:


  • Add oil, chilly, grated ginger, onion, tomato and saute well.
  • Saute the vegetables till they are half cooked.
  • Add salt and sugar
  • Add little water and close the pan for 5 mins
  • Add chilly sause, soya sause and pasta sause.
  • mix thoroughly 
  • Add the boiled pasta to the above and serve hot!
