I never have the habit of taking any item without a side dish..in such case nobody will love to have i guess! that too i love to have all the spicy side dishes.. When ever i go to any restaurant my first preference will not be a main course but a side dish and later will search a main course for that side dish!! so one day i really wanted to have a very spicy side dish for chappathi and i dont prefer vegetable kurma much for chappathi. But as husband was asking for the same spicy stuff, i tried vegetable kurma. It was so hot and spicy that we both ended up in having hiccups continuously for some 20 mins..!! From then on i tried to reduce the spice content in any dish which i do! So here comes the spicy vegetable kurma.
All you need is:
Mixed vegetables- 1 cup
Onion-1/2
Tomato- 1
coriander- little
ginger grated
garlic grated
oil
chilly- 3Nos
chilly powder- 1.5tsp
turmeric powder - 0.5 tsp
water as required
Bay leaves and cinnamon - for taste
Do it this way:
Vegetable Kurma
Mixed vegetables- 1 cup
Onion-1/2
Tomato- 1
coriander- little
ginger grated
garlic grated
oil
chilly- 3Nos
chilly powder- 1.5tsp
turmeric powder - 0.5 tsp
water as required
Bay leaves and cinnamon - for taste
Do it this way:
- Add oil to the pressure cooker and heat it.
- Put cinnamon and bay leaves
- Add grated ginger and garlic ( i always prefer fresh grated rather than paste available in the stores)
- Saute all of the above until the raw pungent smell leaves.
- Add onion and saute well
- Add tomato and saute well
- Add green chillys and mixed vegetables
- Saute well
- Add salt, turmeric powder and chilly powder and saute well
- Add water so that the veggies shall be cooked
- Add coriander
- Close the cooker and cook till you 2 to 3 whistles
- Wait until the steam is released and you can add grinded coconut paste in order to get a thick gravy
- serve hot with soft chappathis.
